Take all the kind of vegetables you like more (zucchini, pepper, potatoes, mushrooms, carrot, onion, tomato, artichokes – not leafs vegetables as spinach , usually I don’t use broccoli or cauliflowers either because they have a too strong flavor that will cover the others) or you’ve at home.
Place them all into a baking tin and add salt and extra virgin olive oil, mix everything with the hands (I shall admit I use to wear the very light plastic gloves at this point).
Place the baking tin into the oven already warmed at 200° and leave it there for at least 40 minutes, don’t mix the vegetables too much and don’t touch them before at least 20 minutes have passed.
Relax, read a book and take a look if they’re ready and soft, it can take more than 40 minutes…
The picture of mine contains 1 tomatoes, 2 red onions, 1 zucchini, 1 eggplant, 2 pepper, some cappers and some pieces of black olives. You really can do this recipe with any vegetable you have available, even only 2 or three varieties.
